Herbed Cottage Cheese

Serves 4


  • 8 tablespoons or about 1 cup of low fat cottage cheese
  • 1 tablespoon fresh chives, chopped
  • 2 tablespoons fresh parsley, chopped
  • ¼–½ teaspoon lemon pepper


  1. Combine all the ingredients in a bowl and mix well.
  2. Serve with Carrot and Zucchini Fritters, as a tasty layer in a sandwich or use as a low-fat topping with fish, chicken or potato.
