Herbed Cottage Cheese
- 8 tablespoons or about 1 cup of low fat cottage cheese
- 1 tablespoon fresh chives, chopped
- 2 tablespoons fresh parsley, chopped
- ¼–½ teaspoon lemon pepper
- Combine all the ingredients in a bowl and mix well.
- Serve with Carrot and Zucchini Fritters, as a tasty layer in a sandwich or use as a low-fat topping with fish, chicken or potato.
